Before the first plate of BBQ hits the line, before any customers arrive, the smoke is already rolling in the back of the house. Our pitmaster is one of the first people in the building each day—lighting the fire, checking the meats, preparing the smoker, and getting the timing just right.

He’s done this for years—not for recognition, but because it’s what he loves.
